So much fun! After a 7 1/2 hour car ride, no sleep and scotch and wine for breakfast, we finally headed out to explore! First stop was a winery in Akron. And the best part... There were goats! It was on a small farm and the goats were right there with you. I went a little crazy with the veggies. Such a cool place! Lots of great bars, restaurants and shops. The neighborhoods were beautiful and had a great, friendly vibe. There were a bunch if little mom and pop restaurants nestled in between the houses but in a classy, cool way. We got to our friend's place at 5:30am and decided not to sleep. Instead we stayed up and had a liquid breakfast while we caught up. The sun was out and there was a nice breeze so we took to the deck and had Riesling and orange juice with blackberries. Well, I had that and the gentlemen had scoth. </div><div class="separator" style="clear: both;"><br></div><div class="separator" style="clear: both;">I know... Not a very healthy breakfast but it sure was delicious and fun. We did however find a cute little coffee shop where I got a coffee with almond milk and a vegan gluten free piece of banana walnut bread! Add quinoa and black beans to a bowl and use a potato masher to mash the beans up a bit. I like them still chunky. Add the rest of the ingredients and mix like you would a dough. Place on baking sheet and cook for about 10 to 15 minutes on each side. One of my favorite things to have for dinner, is breakfast! It's also a good way to finish up odds and ends in your fridge and pantry. A couple potatoes, a handful of sun dried tomatoes, a half a can of cashews...</div>

3 potatoes, one sweet and 2 yukon (or whatever you might have) cubed into little pieces</div>

1 t mustard powder </div>

2 t oregano</div>

Salt and pepper, to taste</div>

Add oil to a large skillet. When hot, add all of your ingredients. Keep the flame on medium. Add water occasionally to keep from sticking. When the potatoes are tender, they're ready to go. </div>

1 package extra firm tofu, somewhat dried and cubed</div>

Place tofu on parchment lines baking sheet. Mix miso and other ingredients in a small bowl. Stir together until miso is dissolved (warm water helps).</div>

Evenly pour dressing over tofu and place under high broiler for 20 minutes. Keep an eye on tofu! When you see it start to turn golden brown, flip and do the same to the other side. The tofu will soak up the miso and get nice and brown. You can leave it in longer if you want it crispier.</div>

This time I tried perogies. It was actually a lot easier than I thought it would be and there are endless possibilities when it comes to filling them. So, here is my version of caramelized onion and potato perogies. <div><br></div><div>Dough</div><div>4 C unbleached all purpose flour</div><div>2 C warm water, maybe a little more</div><div>1 T salt</div><div>3 T veggie oil</div><div><br></div><div>Mix flour and salt together. Add in oil and one cup at a time, add water. Add the first cup and mix until clumps form adding the second cup gradually until a soft dough forms. You may need a bit more water just be careful. Once a soft dough has been formed, take a baseball size ball and roll out on a lightly floured surface. Once you have a thin sheet take a cup or a round cookie cutter and cut circles. Mix well. I asked everyone what they wanted to make vegan. Well, here's one that I thought was perfect for a Friday night! A bottle of wine, chips and salsa and fried avocado tacos with mango purée and tomato foam. Too good for words!</div>

Fried Avocado</div>

2 large, ripe avocados</div>
<div class="separator" style="clear: both;">
Salt and pepper, to taste</div>

In a small bowl, mix Panko with salt and pepper. Place about 2 T of oil in a pan and turn to medium heat. Cut the avocado in half and take out the pit. Cut again into 4's. Peel off skin like you would a cut orange. Place the avocado into the breading and lightly push panko into avocado so it sticks. Put coated avocado into the pan and fry until golden brown on each side.</div>

Place all ingredients into mixer and blend. When foam starts to form, stop mixing. Not everything will be blended. It's better that way.</div>
